Crappie are a favorite across much of America, with the black crappie and larger white crappie mixing in some states, such as Texas. During spawning season each February through April, black crappie males turn truly black, while females are a more mottled black-and-white like the specimen pictured above. Others from dark, tannin-stained lakes may be a speckled green and black. Both species are always a favorite on the table when fried in cornmeal.
